冬瓜果肉中游离氨基酸的GC／MS分析

GC/MS Alalysis of Free Amino Acids in Pulp of Benicasa hispa Logn

摘要: 利用气相色谱／质谱联用技术及电子轰击电离和化学电离方法，对冬瓜果肉中游离的１７种氨基酸衍生物进行了定性分析。总结出了氨基酸衍生物的ＥＩＭＳ及ＣＩＭＳ的开裂规律，鉴定出了三种非蛋白质氨基酸，分别是２－氨基－３－氰基丙酸、丁氨酸和２－氨基－４－烯己酸，同时为气相色谱法分析提供定性依据。
